Healthy Summer Happenings

For exactly one week this summer, we ate extremely healthy food. Just check out that grocery cart!
I was so proud of the variety of vegetables, fruits, legumes, and tofu I purchased, I just had to take a picture. The plan was to cook several very healthy side dishes to put in the fridge and eat with whatever fish we had planned for that evening. I also decided to practice drinking red wine since it's healthier than white. Here's an example of a delicious dinner we had: 
 It's tilapia with marinated squash/zucchini and barley with lemon and herbs. Bean REALLY liked it. And I feel like I won a prize. A meal that is as healthy as it gets, and my husband thought it was so good he asked when we were going to have it again. In fact, he's sitting here next to me and when I downloaded the picture, he said, "That was really good!"

The reason behind the super healthy eating is I've been feeling a little blah lately. I started researching Dr. Weil's Anti-Inflammation diet, which is basically a way to reduce inflammation in your body. It wasn't too different from things I usually eat, just more fish and veggies, grains, and some supplements. So I've started taking a multi vitamin, and 3 others. The Clean Food cookbook I've used in the past includes all of the same principles. So I made my favorite chocolate pudding. 3 ingredients: tofu, bananas, melted chocolate chips. 4 ingredients if you count the strawberries:
We've also been doing something healthy for our marriage- spending time together. Who knew! :)  There are free concerts every Tuesday in Old Town Lewisville, and we've been to two of them. The first was a rock cover band which Bean did not like. I just love outdoor concerts so I didn't care if the band sucked.

We pack a picnic, sneak in some adult beverages, and listen to the band. The last one we saw was Brave Combo, a Grammy-award winning polka band from Denton. Bean really liked them and we had fun dancing.


The last time I saw Brave Combo was at a free outdoor concert in Denton during college, and I guarantee at least 2 of the ladies dancing in the front were at that one too.

Since we've recently started gutting our kitchen, we won't have too many healthy meals for the rest of the month, but I am still inspired by that grocery cart and can't wait to try again another week.
